carrot salad

Looking for a summertime ‘glow’? Swap sunbathing and overexpoure to UV rays for… carrots! Believe it or not, bulking up on orange hued veggies has been linked to a naturally glowing complexion. And if thats not enough, the beta-carotene in carrots aid to tighten and tone tissues to keep you looking forever young.

Carrots are one of my ‘Beauty Foods’ that I will dish on at tomorrow’s ‘Beauty Food’ cooking class as well as on an upcoming segment on the NBC5 Morning Show (details to come!).

This carrot salad will not only make you gorgeous, but it’s tasty to boot! It is a great addition to a summer barbeque or picnic and can be made well ahead of time.

Carrot Salad with Cilantro and Pistachio

Ingredients:

4 cups carrots, peeled and grated
¼ cup fresh lemon juice
1 teaspoon coriander
½ teaspoon smoked paprika
½ teaspoon sea salt
1/3 cup olive oil
½ cup fresh cilantro, chopped
¼ cup pistachios, shelled and chopped

Procedure:

Place carrots in a large bowl and set aside.

In a smaller bowl, mix lemon juice, coriander, smoked paprika, and salt. Whisk in olive oil.

Pour dressing over carrots, and toss to coat. Let marinate for at least 30 minutes or overnight. Stir in cilantro and pistachios before serving.
