berry smoothie bowl

Don’t get me wrong, I love smoothies… but every now and then I get bored of sipping and want to mix it up. Smoothie bowl to the rescue! It is basically a super thick smoothie that can be topped with granola for crunch and fresh fruit for additional texture. It has a cool, creamy consistency, and dare I say, reminds me of ice cream. It’s a perfect start to the day or afternoon pick-me-up.

It might seem strange to see avocado in the recipe. It lends a creamy texture and is low-glycemic. You can easily substitute 1/2 banana for additional sweetness.

Berry Smoothie Bowl

Ingredients:

1/4 cup non-dairy milk
1 cup frozen berries
1/4 avocado, removed from peel
1 scoop vanilla brown rice protein powder
1/4 cup granola
fresh fruit (optional)

Procedure:

Place milk, berries, avocado, and protein in blender. Blend until smooth. Mixture will be thick, so stopping and scraping the sides may be necessary. Add berry mixture to bowl, top with granola and/or fresh fruit.

Yield: 1 serving
