roasted zucchini with red onion + thyme

Looking for a simple summer vegetable dish? It doesn’t get much easier than this easy roasted zucchini recipe. Besides a bit of chopping, all ingredients are simply tossed with oil, arranged on a baking sheet, and roasted until caramelized.

You may want to double this recipe and keep in your fridge to toss into an arugula salad, or use as a sandwich or wrap filling.

Roasted Zucchini with Red Onion + Thyme

Ingredients:

4 small zucchini, cut in half lengthwise and on a bias
1 red onion, halved and sliced
2-3 garlic cloves, smashed
6-7 fresh thyme sprigs
1 tablespoon olive oil
¼ teaspoon sea salt’
1/8 teaspoon fresh ground pepper

Procedure:

Preheat oven to 400. Line 2 large baking sheets with parchment.

Toss zucchini, red onion, garlic, and thyme with olive oil, salt and pepper.

Spread in an even layer on baking sheets. Roast for 20-25 minutes until zucchini begins to caramelize.
